It is assumed that food service staff have the appropriate equipment and technical skill required to ensure that each texture modified food and fluid prepared from a recipe complies with the Australian Standardised Terminology and Definitions for Texture modified foods and fluids 1.

Furthermore, it is assumed that food service staff have an adequate level of knowledge regarding management of allergens. This includes identifying all known and hidden sources of allergens through label reading, as well as prevention of cross-contamination. Whilst care has been taken to ensure all potential sources of gluten and dairy are identified in each recipe, product formulations may change. It is therefore the responsibility of the food service staff to thoroughly check all product labels for allergens prior to use. Other allergens including egg, fish, shellfish, treenuts, peanuts, soy and sesame seeds have not been included in the dietary suitability section of our recipes, it is therefore the responsibility of each facility to manage these allergies.
